Wild Boar Salami / Saucisson de Sanglier
This rich, flavorful French Wild Boar Salami has an excellent balance of seasoning and flavor. The wild boar meat is blended with fresh garlic, sea salt and black peppercorn in an all natural pork casing, cured 30 days and then hand tied.

All our wonderful charcuterie is hand-made by Fabrique Délices, a traditional French charcutier in Hayward, California.
Despite an extensive product line with over 150 different products including Pâtés, Mousses, Rillettes, Foie Gras, Saucisson Sec, Magret, Duck Confit, Garlic Sausage, Merguez, Saucisse de Toulouse, Boudin Noir and Boudin Blanc, Fabrique Délices is still very much artisanal, producing just over 3,000 pounds a day.
“We have some equipment to grind and mix ingredients but then everything is made by hand,” says Sebastien Espinasse, vice president of sales and marketing.
